Fast Fajitas

The semiURBAN Kitchen: Foods that fit your lifestyle

Most nights when we get home after a day at the office, we just don’t have a lot ot time to create a home cooked meal. There’s time, of course, but we also need to catch up on our DVR, spend some time with the kid, and all that stuff. But we really like to cook. So we can either research a little Rachel Ray 30-minute meal, or dig into our own mental cookbook and whip up a tasty and quick option. One of those is our chicken fajitas in a fast fifteen minutes…times two. (15-minute prep, 15-minute cook and serve.)  Here are the seven steps to semiURBAN cooking success.

1) Take two boneless chicken breasts (cut into 1/2 inch strips), and marinate in the juice of one lime, a tablespoon of cilantro, a teaspoon of chili powder, and a dash of salt and pepper. 10 minutes.

 

 

 

 

 

 

 

2) While marinating the meat, slice up one green pepper, and one medium yellow onion.

3) Wrap up four to six flour tortillas in foil and warm in 250 degree oven. Whole Foods has a great, thicker “homestyle” tortilla that holds together nicely when it’s all wrapped up together.

4) Coat your grill pan (or skillet) with olive oil, and heat over medium high until sizzling. We love our two burner-sized pan from All Clad. It’s awesome.

 

 

 

 

 

 

 

5) Cook the veggies and marinated chicken. Start with chicken on one end of the pan, and the onions and peppers on the other. About half way through, mix them together. When done, place on a plate and bring to the table.

6) As you set the table, grab some salsa and sour cream out of the fridge, place on the table. (You can also eat in front of the tv and catch up on that DVR. Multitask, we say.)

7) Sit down, grab a tortilla, pile on some chicken, onions, peppers, salsa and sour cream. Wrap it up and eat.

And there you have it! A simple, fast fajita that’s super easy, and super tasty. Enjoy!

  1. Thanks for the recipe. How much of a difference would you notice if you did not plan ahead and marinate the chicken?

      If you don’t have time, it won’t make a huge difference. One solution, just cook the chicken and then squeeze a little lime juice over it before serving. Just a little. Don’t want to overpower it.
